Grilled Chicken Breast Stuffed W/Prosciutto & Basil

On a work surface spread prosciutto slices evenly with mustard.
Top slices with basil leaves and sprinkle evenly with mozzarella.
Starting with a short end roll up each prosciutto slice.
Pat chicken dry and put on a work surface, skinned sides down.
Remove "tender" (fillet strip located on either side of where breast bone was) from each breast half, keeping rest of chicken breast intact, and reserve tenders for another use. (There should be 1 tender from each breast half.).
To form a long thin pocket in chicken for prosciutto roll: Put chicken breast halves on cutting board and, beginning at thicker end of breast half, horizontally insert a thin sharp knife three fourths of the way through center of each.
Open cut to create a 1-inch-wide pocket in each half.
Fit a prosciutto roll into each pocket and season chicken with salt and pepper.
Grill chicken on a 4" rack on Nuwave oven until cooked through, about 10 - 12 minutes on each side.

Garlicy Mustard Chicken

1 chicken breast
3 large lemons, juice of
2 tablespoons Dijon mustard
2 tablespoons garlic
1 teaspoon cajun seasoning
1 teaspoon thyme
1 teaspoon sage
1 teaspoon rosemary

Combine the above ingredients and marinate the chicken breast in it for 1-3 hours.
Toss on the NuWave rack and cook until tender and juicy. (About 10 - 12 minutes per side). 1 serving

Parmesan Wings

4 pounds chicken wings
1 cup grated Parmesan cheese
2 Tablespoons dried parsley
1 Tablespoon dried oregano
2 teaspoons paprika
1 tsp. salt
1/2 tsp. pepper
1/2 cup butter, melted

Combine the Parmesan cheese and the parsley, oregano, paprika,
salt, and pepper in a bowl. Melt the butter in a shallow bowl or pan. Dip each piece in butter, roll in the cheese and seasoning mixture. Arrange wings in nuwave oven pan and heat on 4 inch rack, turning over once, until browned and cooked through, 20 - 24 minutes total.

Five-Spice Chicken Wings

INGREDIENTS

* 1 1/2 teaspoons minced garlic
* 1 1/2 teaspoons Chinese five spice powder
* 1 1/4 teaspoons salt
* 1 1/2 teaspoons soy sauce
* 3 lbs chicken wings (about 16)

DIRECTIONS

1. Stir together garlic, five-spice powder, salt, and soy sauce in a large bowl.
2. Cut off and discard tips from chicken wings with kitchen shears or a large heavy knife, then halve wings at joint.
3. Pat dry and add to spice mixture, tossing to coat.
4. Arrange wings in nuwave oven pan and heat on 4 inch rack, turning over once, until browned and cooked through, 20 - 24 minutes total.
5. Makes 4 main-course servings.

Caesar Chicken Pizza

2 small or 1 large chicken breast

Garlic Caesar Sauce
3/4 cup olive oil
1 can anchovies (use oil)
1 tbsp. Grey Poupon mustard
1 tbsp. Worcestershire sauce
1 tbsp. red wine vinegar
1 juice from 1 lemon
2 eggs (raw)
3-4 cloves garlic

Crust:
4 oz cream cheese softened
3 eggs
1/3 cup cream
1/4 cup Parmesan cheese
1/2 tsp garlic powder
2 cups shredded mozzarella
1 cup shredded Italian mix cheese

Cook chicken breast in Nuwave (6 - 8 minutes/side). Cut into slices.

Sauce:
Mix sauce ingredients together in a blender. Thicken with a low carb thickener (optional)

Crust:
Mix cream cheese, eggs, cream, Parmesan, and garlic powder until smooth. Spread mozzarella cheese in two round cake pans. Pour sauce over cheese and bake each pan for 10 minutes on low rack in Nuwave until brown and firm.

Pizza:
Spread crust with 1/4 cup of Caesar dressing, sprinkle on Italian cheese and top with chicken. Bake in Nuwave on the high rack for 3 - 4 minutes until heat through and starting to brown. Add black pepper to taste.

Plain Chicken Breasts
Start with something simple like chicken breasts...Place 5 frozen breasts on there, cook 8 - 12 minutes, season, turn, season and cook 8 - 12 minutes more...let rest for a few minutes.

Stuffed Chicken Breasts

Butterfly chicken breasts and fill them with whatever you have on hand. Cook for 10 - 12 minutes per side. Here are some ideas:

Spinach Artichoke Chicken
Stuff with spinach artichoke dip and a little mozzarella, then seasoned the outside with garlic, white pepper and Mrs. Dash tomato basil and cooked 8 minutes on each side. Optional: A slice of Canadian bacon on top.

Cajun Crab Chicken
Stuff with Cajun Crab Dip, season with cajun seasoning

Brushetta Chicken
Stuff with Brushetta, season with Mrs. Dash's tomato basil

Buffalo Chicken
Stuff with blue cheese, coat breast with hot sauce, vinegar and butter mixture.

Shrimp Chicken
Stuff with shrimp dip, season with Old Bay seasoning

Chicken parmesan
Coat the breasts with parmesan cheese-cook 5 minutes each side (thawed) on the 4" rack and then throw the parmed breasts in that "cake" pan and cover with low carb marinara or bruschetta or spiced diced tomatoes and a sprinkle of mozzarella and put that "cake" pan on the rack in the nuwave to melt the cheese/heat the sauce.

Southwest Chipotle Chicken
Stuff with Pico de Gallo (salsa would do too if it was thick) and a little cheddar in there and coated with that Southwest Chipotle seasoning.

Fajita Chicken
Stuff with bell peppers, onions, and cheese in the pocket and fajita seasoning on the outside.

Jamaican jerk
Jerk seasoning and a mixed veggie/cheese blend inside.

Broccoli cheese
Stuff with broccoli and cheese

Taco Chicken
Stuff with taco meat and taco fixings. Serve with salsa, sour cream and guacamole

Chili Chicken
Stuff with leftover chili and a little cheese

Crab Rangoon Chicken
Stuff with cream cheese, imitation crab, green onion, and mozzarella

Alfredo Chicken
Any home made or bottled Alfredo sauce with some mozzarella to "glue" the sauce down. Add some mushrooms or shrimp.

Chicken Parmesan
Spaghetti sauce (watch the carbs) with mozzarella

Chili Relleno!
Stuff with cream cheese and chopped jalapenos and cheddar

Chili Relleno Stuffed Breast
Put a roasted poblano pepper chopped up, light cream cheese, and a little shredded cheddar in side...but really you could use the canned green chill’s and a pinch of cheddar and it would be just as good..

Chicken Houston
Stuff with low carb barbeque sauce, some cheddar slices, and some bacon bits. For the last three minutes of cooking on each side, dab the breasts with a paper towel before brushing on the sauce (so it will stick better).

Pesto Stuffed Breasts
Stuff with 2 spoonfuls of pesto, layered on a sliver of asiago cheese, and then chopped tomatoes spiced with Italian seasoning and chopped garlic

Lasagna stuffed Chicken
Stuff with a spoonful of ricotta, a spoonful of marinara, and a pinch of mozzarella inside the pocket. Add cooked ground beef or sauasage to the marinara if you want

Greek Stuffed Chicken
Stuff with chopped calamata olives, chopped seeded plum tomato, and crumbled feta and season with Cavenders Greek Seasoning

Chicken Cordon Bleu
Stuff with chopped ham, green onion, and a sliver of Asiago cheese.

Brie Chicken
Stuff with Brie cheese, season with sage. Optional: cranberries

Prosciutto Chicken
Wrap brie cheese with prosciutto and tuck in chicken, season with tarragon, wine and butter. Pour pan drippings over chicken when serving.

Diet Cola Sloppy Joe Stuffed Chicken
Stuff with sloppy joe mixture (http://recipes.sparkpeople.com/recipe-d ... ipe=527974) and a pinch of sharp cheddar

For more ideas, just google, "stuffed chicken breasts" and you will see tons of ideas. If you are low carbing, do not use the bread crumbs or flour.

Chicken Crisps:

Season chicken skin as desired and lay on Nuwave 4" rack in single layer. Cook for 5-7 minutes until crispy.

Chicken Fat

When you cook chicken skins, strain the fat you collect through a cheesecloth and store in a container in the fridge. Use it instead of oil or butter when you cook. It tastes great with eggs.

Gilroy Garlicy Chicken Wings

Ingredients
* 2 lb Chicken wings
* 3 Heads fresh garlic;separated
* Into cloves and peeled
* 1 c Plus 1 T. olive oil;divided
* 15 Drops tabasco pepper sauce
* 1 ts Black pepper
* 1 c Grated parmesan cheese


Preparation

Preheat oven to 375. Disjoint chicken wings, removing tips. Rinse wings; pat dry. Place garlic, 1 cup oil and pepper sauce in food processor or blender container; cover and process until smooth. Pour garlic mixture into small bowl. Combine cheese and black pepper in shallow dish. Dip wings into garlic mixture, then roll, one at a time, in cheese mixture until thoroughly coated. Brush shallow nonstick pan with remaining 1 T. oil; arrange wings in a single layer. Drizzle remaining garlic mixture over wings; sprinkle with remaining cheese mixture. Cook on high in the Nuwave 10 - 12 minutes/side until brown and crisp. Garnish as desired. Adapted from: 1st place winner in the Great Garlic Recipe Contest.

Deviled Chicken Wings

Ingredients

* 3/4 c Freshly-grated Parmesan
* 4 lb Chicken wings - (abt 20);
* Salt; to taste
* 1/4 c Mayonnaise
* Freshly-ground black pepper;
* 2/3 c Dijon mustard
* 1/2 ts Cayenne

Preparation

In a shallow bowl, stir together the mustard, mayonnaise and cayenne. In another shallow bowl, toss together well the black pepper and Parmesan. Working with 1 chicken wing at a time, coat the wings with the mustard mixture, rubbing the mixture on well, press them thick-skin-side down into the Parmesan mix, and arrange them parmesan side up on the oiled rack of a broiler pan. Season the chicken wings with salt. Cook them on high in the NuWave for 10 - 12 minutes a side.
