Beef Jerky

I just throw whatever I feel like in a ziplock with some thinly sliced meat and marinade for 15 - 30 minutes. Here is what I use, sorry there are no measurements, I do not measure:

Basics:
Soy Sauce
Worchestershire
Garlic Powder
Onion Powder
Pepper
Cayenne
Steak Seasoning
Liquid Smoke

Others that I add sometimes:
LC Ketchup
Mustard
Red Pepper Flakes
Sesame Oil
Teriyaki Sauce
Hoisin Sauce
Cavender's Greek Seasoning
Lemon Pepper
Frank's Hot Sauce
Tabasco
Splenda
Any seasonings that catch your eye

Cook on 20% power for 30 - 45 minutes a side. Depends how thick the beef is sliced and whether you like your jerky chewy of brittle.

I made a few changes (I dropped the cream cheese and made a mixture of egg, cream and sour cream instead - I poured this over the meat mixture like you do for the White Castle Pie). I riced the cauliflower and stir fried it (in some of the hamburger fat) instead of microwaving it. I cooked it in the Nuwave on the low rack at 70% power for 15 minutes and then the high rack for 3 minutes to brown the almonds. It turned out great. Next time I will add some bamboo shoots to the hamburger.

Frozen Roast Beef (4 pounds)

Buying a roast beef (or 2) on sale and freezing it for later saves time and money. Just take it out and, and under 2 hours, you can have a delightful surprise for the family.
Rinse the beef in cold water so any dry seasonings may adhere. Place roast on 1" rack, top side down. Nu-Wave on HI for 50 minutes. Turn over, top side up, and continue another 50 minutes (RARE) or more depending on your taste. Let sit 15 minutes and enjoy!

London Broil

1 1/2 -2 pound flank steak , 1" thick
salt, pepper, and garlic powder to taste
2 pounds sliced mushrooms
6 tablespoons butter
1/4 cup Worcestershire sauce

Place mushrooms, butter, and Worcestershire sauce on 10" pie plate and set on liner pan. Place the steak on 4" rack. Nu-Wave on HI for 5 minutes. Turn the meat and cook another 5-7 minutes or to desired temperature. Slice the meat at a 45 degree angle against the grain and serve with the mushrooms.
FROZEN - When you find flank steak on sale, buy a few and freeze them for later. (Freeze flat for later use). Spray or rub vegetable oil on frozen steak and sprinkle with seasonings. Nu-Wave for 10 minutes, turn and cook another 15 minutes or to desired temperature.

Florentine-Style Porterhouse Steaks

1 (2 1/2 lb) porterhouse steaks (2-inch-thick)
1 teaspoon salt, plus additional for sprinkling (preferably sea salt)
1 tablespoon olive oil, for drizzling

1. Accompaniment: lemon wedges.
2. Pat steaks dry and rub all over with 1 teaspoon salt.
3. To cook steaks use 4" grill.
4. On HI, bake for about 9 minutes per side (on HI) .
5. To serve steaks:.
6. Transfer steaks to a cutting board and let stand, uncovered, 10 minutes. (Internal temperature will rise to at least 135°F while steaks stand.)
7. Cut each section of meat off bone, then slice each piece crosswise against the grain and arrange slices on a platter.
8. Sprinkle lightly with salt and drizzle with oil.
9. Makes 4 servings.

Fajita Burgers

Put some fajita seasoning on lean burger patties...put 4 patties on the 4 inch rack and mushrooms, peppers, and onions on the 1 inch rack below the burgers. Nuwave for 8 - 10 minutes/side. The veggies cooked perfectly without bothering with them at all below and the meat seasoned the veggies! Top the burgers with a slice of cheese and Nuwave for 2 more minutes.

Cheesy Meatballs

3 lbs Ground Beef
3 Eggs
2 cups shredded cheese
3 tbsp Chili Powder
1 tbsp Red Pepper Flakes
1 tbsp Garlic Powder
2 tsp Onion Powder
2 tsp Red Pepper
2 tsp White Pepper
2 tsp Black Pepper
1 tsp Sea Salt

Place all of the above into a large mixing bowl and kneed, enough to thoroughly mix all ingredients. Form into meatballs and Nuwave in the round pan on high for 8 - 10 minutes a side.
